Victorian English Sponges
These delightful sponges are lighter than Mud Cakes and are also suitable for Designer Cakes as they can also cope with Ganache/Buttercream and/or Fondant Coverings with Toppers.

Australian Sponges
Whilst the Australian Sponges are delicate, light and rise high, they are unsuitable for Designer Cakes because they cannot support the weight of the decorations and dry out too quickly.
Black Forest Gateaux
These delectable cakes are made with Genoese Sponge, soaked in Kirsch Licquer, layered with poached Morello Cherries, Fresh Cream and Rich Lindt Dark Chocolate.
These delicate beauties are suitable for single layered cakes or when displayed on different level stands
